Syglino ( traditional smoked pork)

A Traditional mezé with an orange aroma


  • 2 table spoons Extra Virgin Olive Oil Maxouli
  • ½ kilo -750gr. Smoked Ham (ask for ham smoked with sage)
  • 4 Oranges
  • 2 cinnamon sticks
  • 3-4 cloves
  • spice
  • pepper
  • parsley
  • celery
  • 2 table spoon thyme honey 300

For Garnish

  • 300 Early Harvest Extra Virgin Olive Oil
  • oregano
  • salt and pepper to taste
  • green onions chopped up

First we cut the smoked ham in 2 pieces . We wash the oranges thoroughly , and cut them in 4 pieces. We take a pot and fill  ½ of it with water, we put in the ham the oranges and the rest of the ingredients that are written in the list for Syglino.  We let them boil for  about 30 to 45 minutes (Please keep in mind that smoked ham is already soft, check the boiling time so it won’t overcook)

When the meat is ready take out from the pot and place  it on a plate so it can cool down a little bit.  Slice it  (the thickness of the slices depends on your preferences). Strain the oranges from the pot and use them for garnish. Salt and Pepper to taste,  garnish with oregano and green onions and drizzle it with early harvest 300 Extra Virgin Olive Oil
